To understand how, we need to break the term polyaspartic down into its separate naming conventions. Polyaspartic is composed of two words: "Poly" and "Aspartic". The origin of the prefix "Poly" comes from an ancient Greek word that meant "Many" and "Aspartic" is derivative of aspartic acid and that's where it starts to get interesting.
You see, polyaspartic chemistry was first developed by Bayer and the Miles Corporation in the early 1990's. Polyaspartic chemistry includes molecules of aspartic acid discovered in 1827 by Auguste-Arthur Plisson and Étienne Ossian Henry. This discovery was made possible by hydrolysis of asparagine which was isolated from asparagus juice in 1806. With this knowledge we can can now conclude that Asparagus is Polyaspartics 2nd cousin once removed:
Asparagus Juice -> Asparagine -> Aspartic Acid - > Polyaspartics.
